I might add that it stays around 200 when being driven... Any ideas should be appreciated

You can disconnect the coolant level sensor on the reservoir, that will trigger low speed fans. Turning on the A/C will also do it.
They won't come on by coolant temp alone until 229oF.

Thermostat has nothing to do with the fans, by the way. It only opens the flow of the cooling system, and closes it back when a minimum temperature is reached. And as stated, 225 may not be enough for the fans.
It is absolutely perfectly normal for the temp to creep up if the car is not moving, as in stop-n-go traffic.
Don't be changing stuff out, because you don't have a problem!
Besides, the FIRST thing to check if you actually DO have a high temp problem is coolant level. Is there enough in the system???

I share your discomfort about these warm running cars but that is as designed. Not that I discourage folks who rig their fans to run at lower temps, but I do notice I can go months over the summer w/o the check engine light giving me an O2 error but it comes on so often in the winter I have to plan my state emissions inspectiom carefully.

I haven't ever gotten a check engine light thank god...but I do get rather paranoid about the temp gauge...I just really like my car and don't want to lose her any time soon

It's working like it should. Drive. Stop worrying. Stop looking for things to fix.
