I have a 1999 Aurora, had to have water pump replaced, now when I shut the engine off the coolant runs out under the car what is causing this?

We call that a leak......
Seriously, the first thing to do is find where it's coming from. A hose, a gasket, the radiator, the coolant tank, whatever.
If a shop changed the pump, have THEM find it, they might have missed tightening something down.
If you and/or some friends did the work at home, go over every single fastener you touched during the job and find the one you missed putting it back together.

I will add, when I did my 1st water pump I overfilled my 77 Firebird's overflow tank and it would burp for a couple days.
My idea is look at your overflow also when you or the mechanic is checking everything. Cars might run at 212 degrees but when you turn them off the coolant actually gets HOTTER for the first 5 or 10 minutes as it keeps pulling temp from the engine. 5 or 10 percent hotter. Coolant also expands when hot so maybe just maybe your overflow is overfill or something else shouod be tighter and is giving.

I am currently dealing with this problem as well come to find out i over filled the resovor while it was cold some bubbled out and all was fine. Quick question when you replaced the water pump did you change thermostat too? ?

The water pump sits in the coolant crossover, the coolant crossover has gaskets between it and the heads, these gaskets go bad and leak, look with a flashlight. If the coolant crossover gaskets have not been changed, they are bad. Technician should have caught it when changing the water pump. I have also had to change my heater hoses between the engine pipes and heater core near the firewall.
