Since the original stock 95 Aurora AC Delco battery is no longer in production, which battery is recommended as a replacement?

Really any decent battery should cover you. I think I have the higher end battery from carquest/advance auto. I hear good things about Optima batteries, but I have never used one myself.

Are Interstate batteries good? Is the current replacement 79PG AC Delco battery still the 'Gold' standard for the 'rora?

Don't get caught up on brand names. Most automotive batteries in the US are manufactured by either Exide Technologies or Johnsoon Controls (and a very few other minor players). Point is, AC Delco doesn't make car batteries, they slap on a sticker and make money on your confidence in their name...
With that said, don't go out and buy the cheapest Group 79 in town either, haha. As always, you generally get what you pay for.
AGM or gel cell could also be an option...
And if you go with a non-recommended wet cell replacement, make sure it has vents and the correct polarity, lol!
