To answer a couple cooling questions...normally, the fan comes on too late on these cars, and will tend to thermally cycle a bit much.
For every 1 PSI cap, you have boilover protection for 3 degrees...so a 15lb cap will protect above 212F another 45 degrees F.
Coolant in and of itself isn't really providing the boilover protection.

So if you want to keep the car running cool on a 195 Stat, you'd set fans on at 200F and off at 195F, which works very well.
