So at about 40 degrees ambient temperature (F), I had about 53psi on startup. afdter warm up it sits between 20-30. How does this fare?
Also with an engine with about 180k, or so, miles, what kind of oil consumption should I expect or look out for?

Hard to give you an accurate consumption number, I'm pretty sure I leak more than I burn. But still, only ~ a quart per 5,000 mile OCI @170k miles.
Your cold start pressure seems a little low, but 20+ @ idle is great. Here's my numbers on high mileage conventional 5W30; 70 cold start 18 warm idle 50 cruising (@70mph)

Yeah maybe lower on the cold side but otherwise seems just about exact to what my 98 is. I think it's usually between 60-80 on mine depending how cold. But then again I don't fully trust the accuracy of these pressure sensors anyway.

The oil seems a bit on the thinned out side so I might see a higher number. I got 5w30 Quaker state and wix filter. But jesus this motor takes darn near 8 quarts

Yep, I usually buy two jugs of the 5qters and save the other 2.5qts for the stuff I lose between changes from leaks. Otherwise if it doesn't leak or burn any you only have to get 5qts next change. It does usually take exactly 7.5 qts, at least in my experience.

I have started using the 0w40 Mobil. I think the higher mileage could use a little thicker oil. It doesn’t get that cold here and I don’t mind slightly lower fuel economy.

so what is the normal oil pressure upon start up. I just installed a shelby series 1 engine into my aurora about 2 years ago and I notice now on start up i have oil pressure upwards of 90psi. once warmed up its about 60psi at 1300 rpm and down around 25 at idle
I'll make a new post since I really need to know.
